Shouchu Making Policy
To create beautiful shouchu, we believe it is important to create new flavors with courage and passion, whilst respecting and cherishing the traditional methods that have been handed down from generation to generation.

Limited and reserved sales of Alcohol
All our associates home grow the Koukei No. 14 sweet potato by purely organic cultivation. The use of this sweet potato as the main ingredient in the “Kameshizuku” stock leads to the reserved nature of our sales. We are also attempting to grow rice in water inhabited by the Aigamo, a relation to the common duck, as a natural alternative to using pesticides and weed killer. We have a limited supply of a 3-year old preserved sake made from this rice, but this is not yet on sale. We will, of course, be sure to let our customers know when this product is released.
