Gin no Itteki is fermented from start to finish in Kame casks passed down through many generations. We remove the skin from each and every potato by hand, then feed the potatoes into the Kame and distill it at a high temperature. Finally, we blend the unrefined shochu with another, which we delicately distill at a low temperature using unpeeled potatoes. This creates an exquisite shochu with a rich aroma and a delicate sweetness.
